Farinata - Italian Chickpea Flour Flat Bread





Pour water into a bowl and slowly whisk in the Sartaj Chickpea flour until smooth. Let stand at room temperature for 2 hours. Preheat oven to 500 degrees F. Skim any foam off the batter. Stir in salt, rosemary and 1/4 cup of olive oil. Heat two 10 inch cast-iron skillets in the oven for 10 minutes. Add 2 tablespoons of oil to each skillet, swirling to coat. Put half the batter into each skillet. It should be less than 1/2 inch thick. Bake for 25 to 30 minutes until the edges are brown and crisp. Slide Farinata onto a board and cut into triangle pieces. Sprinkle with pepper and enjoy.
